Ingredients:


 

  • Angus Beef 1.5 pounds / 24 Ounces
  •  

  • Sharp Cheddar - 4 Slices
  •  

  • Thick Cut Bacon - 8 Slices
  •  

  • Butter Lettuce 0.25 pounds / 4 Ounces
  •  

  • Pickled "Red" Onions 0.25 pounds / 4 Ounces
  •  

  • Smoky Chipotle Aioli 0.25 pounds / 4 Ounces
  •  

  • Brioche Style Bun - 4 Buns
  •  

Preparation:


 

  1. Turn on the oven and preheat to 400°F. Line a baking sheet with foil and lay the bacon on top.
  2.  

  3. Follow the directions for pickled "red" onions here: Pickled "Red" Onions Recipe

  5. Divide the meat into 6 ounce portions. Form each portion loosely into a 3/4-inch-thick patty and make a depression in the center with your thumb. Season both sides of each burger with salt and pepper.

    Tips:
    • Take care not to over work the meat
    • Allowing the meat to warm up to near room temperature will provide a better sear that will lock in flavor

  7. Wash and prep the butter lettuce

Cooking Directions:


 

  1. Place the bacon in the oven and start a timer. Begin checking on the bacon around 12 minutes into cooking. The bacon should take approximately 15 to 20 minutes to be a perfect crispy golden brown.

  3. Place beef patties on the grill or pan at medium-high heat and cook for 3-5 minutes.
    • 3 Minutes = Medium-Rare
    • 3.5 Minutes = Medium
    • 4 Minutes = Medium-Well
    • 4.5 Minutes = Well

    Flip the burgers and continue cooking for 3-5 minutes until desired doneness:
    • 3 Minutes = Medium-Rare
    • 3.5 Minutes = Medium
    • 4 Minutes = Medium-Well
    • 4.5 Minutes = Well

  5. Place cheese on top of meat during the final minute of cooking
  6.  

  7. Lightly toast the bun during the last minute of cooking on a separate pan at low-medium heat (if desired).

Assembly Instructions:


 

  1. Place beef patty on top of bottom bun

     

  2. Place the Sharp Cheddar on top of the meat (if not already done)

     

  3. Top the burger with Thick Cut Bacon

     

  4. Top the burger with Smoky Chipotle Aioli

     

  5. Top the burger with Pickled "Red" Onions

     

  6. Top the burger with Butter Lettuce

     

  7. Place the top half of the bun to complete the burger.
